About This Fermented Condiment

This product is alive, unpasteurized, and naturally active. Because it contains living cultures, it continues to gently “breathe” even after packaging. That natural activity can occasionally cause minor leakage. If this happens, you may notice dried residue around the rim of the jar that appears dark brown to black — this is simply oxidation of the product and is completely normal.

You may also notice kahm yeast or even a SCOBY forming on the surface or around the rim. This is a natural occurrence in traditionally fermented foods and is totally safe to consume. You can simply skim it off or stir it back in. Surface discolouration may also occur due to our commitment to avoiding harmful preservativeswhat you’re seeing is nature doing its thing.

This product is packaged in a hermetically sealed jar, making it shelf stable and safe to store at room temperature. That said, refrigeration is recommended to slow fermentation and preserve peak flavour.

To protect the integrity of the product, please use a clean utensil every time. Do not contaminate the jar with a dirty spoon. No double dipping.
